We love pancakes in this house and these vegan banana breakfast pancakes really hit the spot! Not only do they taste super duper amazing but they’re also healthy, vegan and they’re a great way to use up any old brown bananas you may have lying around.
Vegan banana breakfast pancakes
These actually came about on one of our no spend grocery weeks while I was trying to save some extra money towards our family holiday. We didn’t have a lot in for breakfast, we had no bread, no cereal and we just fancied something yummy first thing. What we did have was a manky brown banana, some brown flour (that we rescued from a skip) and soya milk.
I know that flour rescued from a skip sounds gross but there is actually a story behind it. The wholesalers next door to where my partner works often has to throw food out that is past it’s best before dates. Obviously they can’t sell it on past the best before date but the food is still perfectly good to eat. My partner noticed this flour in the skip and spoke to the guy in charge and now we get first refusal for anything that they chuck out. I hate the thought of food waste so we tend to take whatever they throw out.
I made a batch of these pancakes and we’ve been making them every week or so ever since. They taste very similar to regular breakfast pancakes and they have that lovely fluffy texture to them. And best of all the are totally vegan!
